I wanted to ask those that bulid and set up the season, shows, offers, price-types, Pricemaps, fees, GL, etc...how many workers do you have doing this, how many shows in your season, and how many seats does your facility hold?

At Cal Performances we have 5 main venues, and this season we have 57 productions and a total of 111 performances in our presentation season, as well as 67 productions/89 performances of rental events. All production elements are set up by the Box Office Manager, with the assistance of a custom report that helps automate the process of spewing out the unnaturally large number of price maps that we use.
I think she likes to reserve about a week for setting up our presentation season, especially as I think there's a fair amount of consultation on that, while rentals filter in throughout the year.
