I've been asked to help add a "Donated Seat" flag to the printed tickets, so that they aren't re-donated, therefore confusing the reporting.
I've added the "Resold Flag" to the ticket design, but it then prints "Donated Seat" on the tickets. They would rather it say "DFR". Where is this changed? Is it something I can set in ticket design? In the database? I've run out of places to look.

Try using the Mask field of the 'Resold Flag' element to include a case statement.
You could do something along the lines of:
case(val when 'Donated Seat' then 'DFR' else val)
