We are looking for a good place to put emergency contact information - both for our education classes/camps as well as for staff members. Any good recommendations?

You could easily create a note type (it can be control grouped) and store the information there.
Thinking ahead to version 11, you could create an affiliation type of emergency contact and link the constituent records.

We have a custom tab for students that includes emergency contact, allergies, pick up authorization, etc.

You could also create an association type. This would allow you to link more than one emergency contact to an account (for students with divorced parents and other such situations). This would, I think, make it easier to pull emergency contact reports.

We also do what Susan said. We chose to do a custom tab, rather than a soft association because we needed to store phone info for them and didn't want it in a note. So the emergency contacts' contact info goes into a local table, rather than creating actual records for people who don't actually have any business relationship with us, which we considered, in which case it would've been a hard association.
We store emergency contacts for our students in the custom tab of the student’s constituent record. This is also where we keep medical notes, whether or not they have filled out certain waivers, etc. The Student info radio button is then secured in a way that only those who need to can see it.

Hi Katie,
Because we find that emergency info goes out of date quickly, we collect new info for each class/camp order. It is stored in the Custom Tab of the order in text fields (name and number).
