Tracking Meal Selections via Elevated Events

We have set up our menu choices as levels.  We also had our database administrator add totals by level to the bottom of our event report – makes finalizing our counts pretty straightforward.

Anyone have any suggestions for keeping tabs on food selection for elevated events?  We're starting to use elevated events to track guests and table seating for our gala.  Our dinner guests will have several food choices to select from in advance, and we're looking for a way to track which options people want at the dinner.
