Is it possible to create a calendar heat map that shows availability based on percent sold? I'm looking for a quick way to see which performances are under-selling.

This is absolutely possible! I have a similar calendar heat map set up based on # of seats, but it would a fairly simple tweak to make it % of seats. Here is how I set up my formula, with "Seat Status" filtered to whichever seat status you're interested in (i.e. Available or Held/Reserved/Ticketed)...
Then you can set your desired color conditional ranges to your heart's content as follows:
