Hi all. I've been looking for documentation on changing the color of the seats that render in the SYOS via TNEW. I am not finding anything. Help?

You'll need to do that through TNEW support.
Like Gawain said, opening a ticket with support. It's handy to have the color palette codes you want the Legend colors to put in the ticket. We just did in the spring and used our brand colors to be the colors on the chart for the zone prices.
