Data collection question

We conduct surveys and put the results of those surveys in Attributes.  We also create Dimensions in T-Stats that hold this information.

Does anyone collect race information? 

If so, how do you collect it --- website, phone, written communication, in person, surveys?

Also, where do you store the information in Tessitura? 

We are being asked to produce this type of information and we have never collected it before.  We want to create a plan for collection of this information going forward.  Thanks.
