Does anyone know of any way to see how many people have payment plans set up in their subscription orders? We are looking for a way to see how many people have "credit card billing" and "normal billing" before we run the billing reports.

For just "number of" info we use list builder which includes billing type, campaign, appeal etc.
You can also run the billing report in preview mode (just set the update transactions parameter to no) and that will give you a number without billing anyone or writing to a table.
That’s how I get my numbers!
