Hey folks,
We are attempting to accept contributions at the box office with an associated premium, but it appears that Tessitura isn’t built to handle this sort of situation. I’ve got my appeal set up, the premium all set and everything, but when I enter the contribution in my Ticket sales batch it does not get assigned and there is no premium tab where I can select it.
Anyone have clever workarounds?

You are right—Tessitura doesn’t handle premiums via ticketing. Those need to be processed via Contributions module to get the premium.
What we’ve done when the ticket office has to take reservations for events that need to be processed by Dev is create a general admission event, sell tickets to it, then cancel the ticket and put the money into a special on account type that can then be processed by someone with access to the Contributions module.
