we have an order that needs to return the seat because the guest won't be able to make it but they would like the fee to be a donation to the Museum.
would you mind to helping me with how to do that?

If the person doesn't have an account in the system, make one.
I would return the ticket in a new order under their name (don't use donate for re-sale).
You can then put the money in an on account payment method for the development folks to take care of, or you can put the money in a fund on the contributions tab in the ticket order.
