We're looking at upgrading and I'd like to see a What's New document, but for the life of me I can't find one anywhere on here.

You can also find it in the 12.1 help system in the What’s New in v12.1 section (once you follow the link, click the link at the top of the help topic to open it in the full help system and then look in the TOC under N-Scan v6 Enhancements:

Try here. It’s the application guide that has installation instructions, but also has details about the features. We found it very useful during our TEST upgrade.
