I have created a document that identifies what happens to data when you use Convert to Household. The documented I've attached shows the data that is owned by the individual vs. the data owned by the household. It also shows the data moved during the Move Transactions function.
I'm happy to share this and I'm hoping you can take a look and see if I have everything right. This is going to help us decide to use the Convert function versus creating a new household from scratch.
