I am looking for information on how to add the Sort Name, Constituent, General, to a List. Reviewing all fields selectable in List Builder I cannot find that field.
I have been able to identify and add it for building output sets, but not on how to have it show up as a selectable field in building a list.

Why would you want the sort name for building a list? Can you give example of a list you are trying to build?
Likely the user wants it to sort by since household names are not sufficient. However, he likely really needs to setup an output set and use that and his list.
We have setup the sort name in the output set builder and just was trying to find out if there was a similar way for list builder.
