Does anyone else see this periodically? And if so, do you know how to stop it from happening?

We had an employee that would get this from time to time and I believe it was from her minimizing too many windows. I had her start using the GoTo menu only to navigate and the problem seemed to go away.I don't think that I was ever able to reproduce the problem myself.
An instance of the error you describe was caught and fixed in v8.0.0.2, where a report and the system tables window were open at the same time.
Two problems with the System Tables window have been fixed. First, if maximize sheets was checked in Tools/Preferences and both a report window and the System Tables window were open, switching between the two windows could result in the main menu becoming corrupt. Secondly, if the System Tables window was minimized and then selected again using Ctrl-Enter, the panes in the System Tables window would resize incorrectly.
If you are able to replicate this issue, please open a support ticket!

That's most likely the cause. I have been mucking about with reports and system tables and I've had sql management, profiler, report set-up and infomaker open all at once.
I'll keep an eye on it and see what the circumstances are when it next happens.
