We are using the TNew Bubble customization in order to sell individual seats by pod for our Summer Season. I'd like to be able to track the number of pods we have available to sell instead of seats since once one seat in a pod is sold that pod is no longer available. Is there a widget that will track the number of available pods in each price zone per performance?

I'm afraid not.
The TNEW Bubble Seating customization does a live check against the seats in the cart to determine whether there are any seats directly adjacent that are not also in the cart. There is nothing in the database that designates a given seat as being part of a given bubble that we could leverage in Tessitura Analytics to count bubbles.
We might get an [Approximate Remaining Bubble Count] when dividing the [Seat Unsold Count] by an average bubble size if you know or can determine it.
You might also check the pre-built Performance Sales dashboard to look at a Seatmap With Days Sold Prior to Performance Heatmap widget. It won't give you the count of bubbles as a number, but does offer a visual. A bespoke dashboard of Seat Map widgets, one for each Screen in your Seat Map, and with color coding based on [Seat Current Base Value], could get you fairly close to your goal, or offer a way to determine that average bubble size.
