We're trying to track visitor behaviour based on their frequency of visit and want to work out if there's a way to track the number of orders within a time period. E.g. visitors that came once this year spent on average $/£X, visitors that came twice spent $/£X
Any help much appreciated!

I recommend using some constituent elements for this. There's already one for Count of Events in the Past Year, and another that is Total Ticket Purchase Range.
You can use one of the Custom Range elements to set up a Past Year Ticket Purchase Range element. You can find more detail in this section of the help system and in Part 2 at 11m:30s of this video.
