I genuinely hope I'm just being dense but I cannot seem to figure out how to copy an output set so that I can then just change some filter values and have a slightly different version of the output set. ALL HELP (even from people who need to mock me mercilessly for not knowing how to do this) is welcome.

Yes! You should be able to save a copy of an output set by opening a list in listmanager, then clicking on the output screen, then selecting the output set you wantto save a copy of, then clicking Save a Copy from the Output Elements or OutputFilters tab, not the Properties tab.
