I am looking for an efficient way to track pledge reminders (invoices) so we can track how many times/dates we have contacted donors to collect their payments. Maybe run a report to look at those attempts.

If you are generating your pledge reminders via the utility Pledge Billing, make sure you utilize the Promotion Details functionality when running it (update flag = "Y"). We have an appeal called "Pledge Billing" that we always promote to when we run the utility, so those patron records get stamped with a promotion record.
This way, you can run reports or base lists on the Promotions log to review the frequency of billings.
