We've been good at using Tessitura for ticketing and straight donations for many years, but are only just getting the hang of putting sponsorship transactions, in-kind donations etc into the system.
Is there any way of manually backdating adding past contributions / sponsorship income etc, just for historical / reference purposes - not actually transacting any money?

We have done this, but you'll always need a payment method. We have a fake payment method called Data Conversion that was used to import all gifts when we moved to Tessitura and we still use it for historical updates. It's tied to a non-money GL that accounting knows to not record as income in. We have a similar one for gift in kind donations (called Gift-in-Kind).
You'll have to make sure you have old campaigns dated correctly and change the date to when your payments occurred.
