We are at the beginning stages of configuring Tessitura and are weighing the option of tracking committees using records (committee record and affiliating committee members to that record) or doing a customization. I'm reaching out to see if anyone out there has any thoughts on pros/cons one way or another and also, if anyone has any customizations they have done to share.

I echo Heather. We have the same approach. Board membership is tracked through a membership and constituency combo, and the committee involvement through relationships (though for internal purposes we have moved everything, literally all relationship types, to one category, which has it's own pros and cons). The record name is the name of the committee, e.g. SCFTA Board Finance Committee, and then each member's individual record is affiliated to their respective committees. The record type of the committees is "SCFTA", so that they don't pull into our daily reports and are easy to isolate and suppress from our consortium members.
One member of our development team is responsible for all board data management in Tessitura. That person will usually update all of the committees when they are approved at the start of the year, and just makes adjustments throughout the year as members join and resign from the board. Occasionally, an intern will assist with the data entry.
