I'm hoping someone could advise as to when you would use an activity rather than an event or elevated event?
What we are specifically aiming for is the best way to manage guest lists and RSVPs for free events. I can see how Activities are displayed in a constituent's record but don't quite understand how you would set one up for multiple people.

For what it's worth, we break the rules a bit --
If we're doing a seated dinner where our invitees are going to be forwarding on guest names to us, we'll typically use Elevated Events. The interface is more robust for Guest Name tracking, and we like to be able to view our attendees by grouping (or dinner table) while also having a "paper trail" in each guest's record. To do this, we essentially sell $0 tickets.
